Thermador Crispy Oven Chicken Wings

Put the Convection Roast mode on your Thermador oven to get the best results. The Convection Roast mode helps create an evenly browned and crispy skin on the chicken wings.

In a saucepan, melt the butter over medium heat. Add the flour to the butter and stir until completely combined. Add the wine to the butter/flour mix and bring to a gentle simmer. Stir in the milk, tarragon, and mustard and bring to a gentle simmer. A handful at a time, add the cheese to the sauce, stirring to melt the cheese. Season with salt if desired. Keep sauce warm using the ExtraLow burner function or similar very low heat setting.
